Beer-Battered Trout

Ingredients:

  • 1 lb. Trout
  • 1 cup flat beer (leave it opened in the fridge overnight).
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Frying oil to cover

 
Directions:

Filet Trout. Cut in smaller pieces. Pat dry with paper towel.

Combine flour, baking powder and salt in bowl. Add beer and mix well.

Dip fish into batter, then fry in hot oil until golden brown, about 2 minutes on each side.


Mustard-Baked Trout

Ingredients:

  • 4 Trout Filets
  • Salt & Pepper
  • 1 Tbs. Olive Oil
  • 1 Cup Sour Cream
  • 3 Tbs. Dijon-style mustard

 
Directions:

Preheat oven to 350 degrees. Rub trout lightly with salt and pepper. Combine sour cream and mustard. Coat fish with mixture. Rub baking sheet with olive oil, and add fish to sheet in a single layer. Bake at 350 degrees for 15 minutes or until fish flakes.
